Depending on your budget, I would definitely start off with at least three lights. I recommend using mostly white lights, as color can easily be achieved by using gels in front of the lens. Most of the time, I find myself using only white lights to get clean, natural lighting.
I rarely go above five lights in one shot. I believe the sweet spot is around five lights—that gives you maximum flexibility, and it’s always good to have backup if one of your lights runs out of power during a shoot.
